Mmm...Mmm! Pancakes


I'm sorry! but Cracker Barrel ain't got nothin on me and my vegan pancakes. The best part is...no animals were harmed in the making of this dish which to me, makes them taste even better. Never thought you could have pancakes without milk and real butter did you. Try this recipe and you'll never go back.

Ingredients: ( I will usually double the recipe for 4 people or more)

* 1 1/4 cups organic all-purpose flour

* 2 tablespoons organic cane sugar

* 2 teaspoons baking powder

* 1/2 teaspoon salt

* 1 tablespoon of cinnamon ( I added a lot b/c I LOVE cinnamon)

* 1/2 teaspoon of nutmeg

* 1 1/4 cup almond or soy milk

* 1 tablespoon of sweetened or unsweetened applesauce

* 1 1/2 tablespoons vanilla extract

Sift the flour, sugar, baking powder, salt, cinnamon and nutmeg together in a small bowl. Make a well in the center of the dry ingredients, and pour in the wet. Stir just until blended; mixture will be lumpy.

Heat a lightly oiled (I use Earth Balance butter) griddle over medium high heat. Drop batter by large spoonfuls on the griddle and cook until you start to see bubbles form and the edges become dry. Flip, and cook until browned on the other side. Repeat with remaining batter.

I will usually turn the over on 210 degrees to put a pan with parchment paper on it and will put the pancakes in the oven till they are all done so they remain nice and warm.

Top with your favorite fruit or nuts and syrup. As you can see...I topped mine with toasted pecans & bananas. As my Meme says...it tastes so good, makes you want to touch yourself...ha-ha.
